nautical birthday dinner

For my father-in-law’s 65th birthday, I hosted a nautical birthday dinner for our family.  He is an avid sailor and it seemed to be a fitting tribute for the celebration.  I love the striking combination of red, yellow and navy blue.

Many of the touches that I used for the party would be a great for a Labor Day weekend event (like lobster rock candy pops and a lighthouse bucket with wrapped napkin bundles).

I always associate this end of summer celebration with the water, as many in the bluegrass try to soak up a final summer weekend on a Kentucky lake.  Plus, the light brunch menu is great for a summer get-together.

frozen berries with white chocolate sauce

This may be one of my favorite, easy entertaining recipes: so impressive, so simple, so delicious.

What you’ll need:

  •  1 1/4 pounds good white chocolate, coarsely chopped (I prefer Ghiradelli.  Also, be sure to use chopped chocolate bars and not chocolate chips, since the chips do not melt as easily)
  • 2 1/2 cups heavy cream
  • 2 tablespoons pure vanilla extract
  • 2 1/4 pounds frozen mixed berries or frozen raspberries (I used a berry assortment from my mother-in-law’s garden, but store bought is fine!)

Step by Step:

  1. Combine the chocolate, heavy cream, and the vanilla in a heat-proof bowl and set it over a pan of simmering water until the chocolate melts.
  2. About 5 minutes before serving, remove the berries from the freezer and place them on individual serving plates. Ladle the warm chocolate sauce over the berries and serve.

Voila!  Grab a spoon and dip into this decadent dish.

a simple favor

These cute boxes were the very fun takeaway from my sister-in-law’s baby shower that I hosted in June.  For any gathering that I host, I love to send my guests with a takeaway, but the cost can add up quickly.

Instead, start with an inexpensive, paper box.  (I loved these adorable yellow stripe ones.) By adding the guests name (these doubled as place cards), a little elephant sticker (our theme) and baby boy ribbon, suddenly these simple boxes had the “wow factor.”  I added some wrapped candy inside and voila!

gluten free slow cooker breakfast

At my house, I’ve begun a gluten-free diet to try to clear up some health issues that were believed to be a result of gluten intolerance.  After just a few days, I felt amazing!  Now, over four months down the road, I am building quite the repertoire of delicious, easy, gluten-free recipes for my family to enjoy.  This was one of our recent trials and it was a smashing success!

What you’ll need:

  • 1.5 cups of shredded cheddar cheese (make sure that it is gluten-free cheese; we like Sargento’s)
  • 4 chicken and apple sausage links (I used Johnsonville’s gluten free)
  • 12 eggs
  • 1 cup of fat free or skim milk
  • 1 green bell pepper diced
  • 1 bag of Ore-Ida shredded hash brown potatoes
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper

Step by Step:

1.  Place hash browns in your slow cooker.  Try to break up any frozen lumps.

2.  Chop sausage into bite-sized chunks and dice the bell pepper.

3.  Whisk the eggs and milk.  Add the salt, pepper, diced green pepper and sausage into the whisked mixture.

4.  Pour egg mixture over the hashbrowns in the slow cooker.  Cook on low for 6-8 hours and serve warm.  Serves 6-8.
We enjoyed our casserole with additional shredded cheese on top and a bit of salsa.

summer scents

Wearing perfume is one of my favorite, easy mood boosters.  I adore Beachy by Lily Pulitzer.    It was a seasonal perfume in 2008, so I try to stock up whenever I find some at an outlet or clearance store.  (Don’t you just hate when your favorite product is discontinued—-its always my luck!)

Beachy has been my go-to summer scent for several years now, with its delightful citrus aroma.  Anything citrus reminds me of the fun of summer.
