sweet tooth satisfied

As someone with a perpetual sweet tooth, this is one of my favorite go-to guilt-free desserts.  At only 170 calories, this gives me the taste of a hot, yummy, baked dessert without the calories.

What you’ll need:

  • 3 tbsp of any flavored cake mix (I prefer french vanilla, butter pecan, strawberry, or chocolate.  This also works with gluten-free mix)
  • 2 tbsp of water
  • microwavable dish (I use a ramekin or coffee mug)
  • microwave

Step by Step:

  1. Measure 3 tbsp of cake mix and place into dish.
  2. Add 2 tbsp of water and stir.
  3. Microwave for 1 minute on high.
  4. Top with the topping of your choice and enjoy.  I love a bit of powdered sugar or a dollop of cool whip.


See, it’s totally easy!  3-2-1, cake!  Yum.

This is also a great dessert for unexpected guests–it’s great with a cup of coffee.

baby boy showers can be beautiful, too

Since having my son three years ago, I’ve been on a crusade—everything for little boys can be beautiful!

These are some images for a shower that I hosted this past September.  It was every bit as lady-like a soft as a girly gathering, simply opting for pale blue instead of pastel pink.

My co-hostess, cleared her family room furniture to make room for two rented round tables.  We love using round tables for gatherings, since they encourage conversation and an intimate feel.

Guests were greeted with a baby Jacob banner that the mom-to-be took home at the end of the gathering.  Colorful blue suckers added to topiaries added a touch of whimsy.

Regular readers know of my passion for menu cards.  It is also fun for the honoree to have something to remember the little details of the day by (including the food).  This delicious food was prepared by Cutting Board Catering (highly recommend!)  Having a chef cook in your home is a luxury for you and fun for your guests.

Don’t be afraid to add a touch of elegance to a baby shower, particularly if it is fitting for the mom-to-be!
