holiday bites

I hosted our annual holiday open house this past weekend and I thought I’d share a few of my favorite holiday bite-size hors d’oeuvres.  My philosophy is to serve just 4 or 5 dishes and have plenty of them to go around!  Huge thank you to Elizabeth with Cutting Board Catering for helping out with the food.  While I can’t really share the caterer’s recipes, I hope that these holiday bites will serve as inspiration for your upcoming gatherings.

Pesto Potato Frittata

Most people think of frittatas for breakfast for lunch, but they are a hearty and substantial appetizer.  Bonus: They can be served room temperature.  While any frittata ingredients will do, this pesto and potato version is a crowd pleaser and vegetarian-friendly.

Veggie shooters

Spooning a little bit of ranch dip into individual cups creates a perfectly portioned veggie shooter.  Mine had a sugar snap pea pod, celery stalk, baby carrot and broccoli floret.  Much neater than your average veggie platter.  BONUS: No fear of double-dipping.

Shrimp Cocktail

Nothing feels more like the holidays than shrimp cocktail.  It automatically makes the event feel special and luxe.  Just like the veggie cups, I serve three shrimp in an individual cup with cocktail sauce.  I buy my shrimp frozen and simply defrost overnight in the refrigerator.  BONUS: Guests can dispose of the shrimp tails in the cup when they are finished.  No more shrimp tails lying around!
