what’s for dinner?

Summer is such a fun time to try new recipes!  With the longer days we are eating dinner later, leaving extra time to cook delicious meals.  I am currently following the Autoimmune Protocol Diet to try to calm down some of my autoimmune inflammation issues, which has provided an additional cooking challenge (I already eat gluten free).  Here are some of the winning dishes from our house:

After 45 days of eating this food plan, I have noticed significant improvement in my inflammation.  Plus, I like the challenge of cooking with constraints!
